Hello There. My name is Craig Thiebaud and I am excited to share my food adventures in my home kitchen with you. I am a trained chef and studied at the International Culinary Center (formerly The French Culinary Institute) in SOHO, NYC. Classic French techniques serve as my touchstone in the kitchen but I think you’ll find that my interests run from cuisine to cuisine all over the world. My food tends to be rustic and unfussy, often served family style when cooking at home.

I currently live in Berkeley Heights, NJ, which is located about 30 minutes outside of NYC. I cook with fresh, local ingredients and focus on organic foods when they are available. I belong to a local farm delivery service that provides mainly organic and local New Jersey produce that is available at the peak of the season. The service is called justfarmed.com and is located in neighboring Westfield, NJ. I will focus on using produce sourced from just farmed as well as from farmer’s markets around the area. I will also try my best to source meat and dairy locally as well.

Currently among many other culinary interests and experiments, I am delving into the art of bread making and dipping my toe into the cheese making pool. So I expect to jump from one topic to another and back again, reflecting a child like playfulness I try to bring to my foodie adventures.
