This is an easy and inexpensive, though tasty, side dish. Enjoy! Recipe follows after the jump.
Boiled and sautéed green beans with garlic, citrus, and olive oil:
Prep Time: 10 minutes
Cook Time: 10 minutes or less
Total Time: around 20 minutes
Ingredients:
One to one and one-half pounds of fresh green beans (or alternately one bag frozen whole green beans).
2 cloves garlic chopped
One lemon or one orange or both (using both zest and juice)
3 tablespoons olive oil
Kosher salt and freshly ground pepper
Instructions:
Before you start cooking, snip the stem ends of the green beans.
Chop the garlic.
Zest the lemon and/or orange and place in bowl. Juice the citrus and place juice in bowl.
Place green beans in skillet. Add just enough water to halfway cover the beans. So, we aren’t using much water at all. Season the water adding a tablespoon of salt. Mix salt into water and beans.
(If you are using frozen whole green beans instead of fresh, place the beans a strainer and run water over the beans to unthaw. Once unthawed, place beans in salted water as above and proceed from there).
Heat skillet on medium and bring beans to boil. Allow all water to evaporate so that water has evaporated from the pan.
At that point, add one tablespoon of the olive oil and stir beans in pan to coat. Cook one minute. Add garlic and cook another minute. Remove beans and garlic from heat.
Take citrus juice and zest and whisk or vigorously stir in two tablespoons of the olive oil. Take oil and citrus mixture and place gently in pan off heat. Stir, tossing beans and garlic to coat. Remove citrus, beans and garlic from pan and serve immediately. There will be some leftover oil, juice, and zest left in the pan. Just leave it there as the beans will be nicely coated with the mixture of zest, juice, and oil already.
